Cookie Recipe

I know - I know.  What's a cooking recipe doing on the FAST Man EFI web site?  Well, I come from the Midwest, and my mother used to cook these awesome cookies.  I recently found the recipe and reworked it until I created a cookie that I really like.  I said, "What the heck.  Share it".  If you have other "Racing Recipes" send them to me and I'll add them.

Rich Nedbal’s Racing Chocolate Chip Cookies

Mixture #1:
1 cup plus 4 tablespoons flour
½ teaspoon baking soda
½ teaspoon salt

Mixture #2:
¼ cup shortening
¼ cup butter
¼ cup sugar
½ cup brown sugar (pat down to measure)
1 teaspoon vanilla
¼ teaspoon water

1 egg - beaten

¾ cup chocolate chips
¾ cup chopped pecans

Mixture #1: Combine flour, baking soda and salt; then set aside.
Mixture #2: In mixing bowl combine shortening and butter.  Warm slightly and mix to combine shortening and butter.
* Add sugar, brown sugar, vanilla, and water to mix.  Beat on slow setting until creamy.

* Blend in the beaten egg while mixing.
* Slowly add mixture #1 to mix.
* Then add chocolate chips and nuts to mixture.
Mix only long enough to blend ingredients. Do not over beat mixture.

Spoon onto ungreased cookie sheets (makes 24 cookies)
Bake 10 to 12 minutes at 375 degrees.  (10 minutes makes a softer cookie)
